Goodness, It has been a while since I posted. I have been so overwhelmed with wedding planning and condo renovations that I let things slip around here. I am jumping back into the game with this smokey blue potato soup. Spicy soups are my weakness. I have learned over time that not everyone enjoys having their mouth on fire, as I do. Ha. So, with that in mind, I evened out the heat on this soup with smoked paprika. The heat level is mild and smooth. If you like a touch of heat, this soup is for you.

Smoked Paprika Blue Potato Soup

Potatoes are such a convenient culinary canvas of unlimited possibilities. Potatoes are a key staple in every cuisine around the world! I personally love potatoes in all forms. Soup is definitely my favorite way to enjoy them! For this recipe I chose blue potatoes [ also known as purple potatoes ] for their earthy, nutty flavor.

Smoked Paprika Blue Potato Soup

A smokey, warm soup that combines smoked paprika, blue potatoes, and coconut milk for a velvety finish.
Ingredients
  • 1 tablespoon olive oil
  • 3½ cups low sodium chicken broth
  • 1 shallot, minced
  • 2 teaspoons smoked paprika
  • 1 bag of blue potatoes - chopped [ peeled if you prefer - but not necessary ]
  • ½ teaspoon black pepper
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon turmeric
  • ¼ teaspoon sweet basil
  • ¼ cup coconut milk
  • freshly grated deli parmesan cheese
  • additional sweet basil + smoked paprika for garnish
Instructions
  1. In a large pot over medium/high heat add olive oil, then shallots; saute until shallots are fragrant - 3 to 4 minutes.
  2. Stir in chopped blue potatoes, 3½ cups chicken broth, smoked paprika, pepper, salt, garlic powder and ¼ teaspoon sweet basil. Bring to a boil, then lower heat and simmer until potatoes are soft - about 15 minutes.
  3. Using an immersion blender, puree until smooth. Add more broth if you like a thinner soup. Stir in coconut milk. Season additionally to taste.
  4. Top with freshly grated parmesan cheese and a hint of smoke paprika + sweet basil. Enjoy!

Potato soup is so simple and this version totally wins out on flavor. The smoked paprika adds a warmth to this soup that is subtle. Blue potatoes are quite tender from the start so they cook quickly and blend down to a smooth texture. The skin of blue potatoes can be left on and blended down without adding an unpleasant texture. They are the perfect potato for this recipe!

I made this potato soup two nights ago and the fiancé gave it an eleven on a scale of 1 -10. That’s what I call a successful dinner. This recipe will serve 2-4 depending on your portion size. We’re gluttons, so it served us each once. Ha! Double up the recipe if you want to make this for a larger group.

Spicy Jasmine Rice & Red Quinoa Stuffed Peppers

Roasted peppers stuffed with savory turkey and mushrooms mixed with jasmine rice, red quinoa, and lentils topped with fresh parmesan cheese.
Ingredients
  • 6 Bell Peppers [ halved and de-seeded
  • 1 lb ground turkey
  • ½ tsp. garlic powder
  • ½ tsp. poultry seasoning
  • 1½ tsp. paprika
  • 1 tsp. crushed red pepper flakes
  • ¼ tsp. ground ginger
  • salt to taste
  • black pepper to taste
  • 2 tbsp. olive oil
  • 3 tbsp. unsalted butter
  • 2 cups chopped baby bella mushrooms
  • 2 cups deli parmesan cheese [ shredded ]
  • 1 cup of the Village Harvest Organic Protein Blend [ cooked according to instructions ]
Instructions
  1. Step 1. Cut peppers in half and clean out seeds. Drizzle inside with olive oil and sprinkle with black pepper, crushed red pepper and shredded parmesan cheese. Set Aside on foil lined baking sheet.
  2. Step 2. Cook the Village Harvest Organic Protein Blend according to instructions + add 2 tablespoons of butter to water.
  3. Step 3. In a large deep skillet over medium/high heat cook ground turkey and mushrooms together with garlic powder, poultry seasoning, paprika, crushed red pepper flakes, ground ginger, salt to taste, and black pepper to taste [ 8 -10 minutes ]. After meat has cooked through add in 1 cup of shredded parmesan cheese and drizzle with olive oil. Reduce heat to low. Stir often.
  4. Step 4. Once the Village Harvest Organic Protein Blend has cooked fully [ about 20 minutes ] transfer into skillet [ including any water that has not been absorbed yet ] with turkey and mushrooms. Add in olive oil, 1 tablespoon of butter, and ½ cup of the remaining shredded parmesan cheese. Fold everything together.
  5. Step 5. Spoon turkey/ protein blend into prepared pepper halves - fill generously. Top with remaining ½ cup of shredded parmesan cheese + salt and pepper to taste.
  6. Step 6. Bake stuffed peppers on 350˚ for 10 minutes then place under broiler for 5-8 minutes.
  7. Step 7. Serve and enjoy!
Notes
- This recipe is quite flexible. Add more of the spices to taste or pull back on the paprika and crushed red pepper if you prefer less spiciness.
- Ground chicken is a delicious substitute for ground turkey. Any type of ground meat works with the recipe.

My Silent Struggle With Depression

Hello sweet friends. It has been a minute since I shared something deeply personal here on the blog. I am getting down to the nitty gritty today and being completely vulnerable with you guys. Most of you know me as a beacon of positivity and encouragement, the girl who finds the best in a situation. But in the midst of it all I have battled depression – a lonely pit that often swallows all of the light in my life.

I have wanted to open up about this subject for a very long time. First, though, I had to sort out my own heart and find the words to properly communicate my struggle in a way that I hope will encourage you if you are walking through depression yourself.

I sat down so many times and tried to write this post. I stared at the blinking cursor on the screen desperate to pour out my truth. Fear has kept me from being able to share my struggle. The fear of admitting that I battle depression almost daily absolutely grips me. My heart wants to share the real, raw truth but that it not an easy task. Bearing my heart for the world to see [ read ] is terrifying.

No one wants to admit that they struggle with depression and anxiety. There is a definite stigma that comes with it. In reality, admitting that you are struggling is the most freeing thing that you can do for yourself. Admitting that you are scared, lonely, hopeless, lost… that takes a mountain of courage. Admitting those things is 100% the first step to conquering the dark hold of depression and finding the light again.

Finding Relief From Depression

Let me start off by saying that I have been affected by not only depression, but, anxiety as well. I think the two often go hand-in-hand. In my life these two emotional struggles are connected by a common stressor, but are not usually present at the same time. My depression stems from my chronic physical pain/health concerns paired with constant worry about my health in the long run. The pain and sickness beats me down.

And that’s where anxiety creeps in. Never knowing when I will have an attack or how badly it will be creates tremendous anxiety within me. There is a loss of control in it all that honestly scares me. My body so often seems to fail me or blatantly work against me. It is defeating and disheartening. Yet God is faithful. He always sustains me, carries me, and repairs my broken anxiety riddled heart.

Depression is an emotionally isolating mindset to be in. How do you live joyously when you feel empty and broken?

The answer is simple and yet feels impossible. The answer is: you just live. Day by day and moment by moment – choosing each second to acknowledge the good and the joy around you. Depression feels like a dark pit where you sit alone, unable to see or feel anything good. But the good is still there even when you cannot see it or feel it. Acknowledging the presence of all that is good helps lift the burden of hopelessness. It is the light at the end of tunnel – reminding you that there is relief.

There is no pit so deep, that God’s love is not deeper still.

I love the above quote so much. It is a beautiful reminder of such a powerful truth. There is no place too dark, too deep, or too isolated for God. God’s love can reach down into the blackest pit and find you. He can and will rescue you from the darkness of depression. He rescues me everyday. Sometimes in a deep breath that pulls away the tears and sometimes in a sweeping peace that settles my heart.

An Important Truth

One important thing to remember if you share this struggle is that you are more than depression. You are a whole person. I have to remind myself of this often. The stigma of “mental illness” around depression/anxiety is wrong. Battling these emotions does NOT make you mentally ill or mentally unstable. Depression is something that we experience – it does not define who we are. It takes incredible strength to weather the ups and downs of these emotions. Because of the stigma there is shame connected to it all. I have kept silent about my struggle because I do not want people falsely attaching that stigma to me. I am a whole person that struggles at times with depression/anxiety because of tremendous physical pain. That is all.

Remember that you are whole and you are strong.

I simply cannot abide by my baked goods tasting like a fruit! The best thing about this recipe is that the banana is virtually invisible to your tastebuds. Seriously. You cannot tell that it is in them.

These dark and fudgy, honey sweetened brownies are the perfect indulgence for satisfying chocolate cravings. Dark chocolate melts into a gentle honey and banana sweetness that is irresistible.
Ingredients
  • 2 medium size bananas [ starting to brown ]
  • ½ cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 4 tbsp honey
  • 2 tbsp coconut milk
  • ½ cup chocolate protein powder [ I used Bob's Red Mill Nutritional Booster ]
  • ½ cup unsweetened cocoa
  • 1 tsp instant espresso
  • ½ cup 85% dark chocolate - chopped
  • 1 tsp baking soda
  • -- FOR THE TOPPING --
  • ¼ cup macadamia nuts
  • 1 tbsp coconut sugar
Instructions
  1. Preheat oven to 375˚ and grease a 9x9 square baking dish.
  2. Pulse together macadamia nuts and coconut sugar in food processor. Topping should be coarsely chopped. Set aside.
  3. Place bananas, applesauce, coconut milk, vanilla extract, honey, cocoa powder, instant espresso, and protein powder in blender or food processor and puree until smooth. Pulse in chopped dark chocolate and baking soda.
  4. Pour batter into prepared dish, spreading evenly.
  5. Bake for 25-30 minutes, or until edges pull away from pan.
Notes
- Any kind of nut is delicious on top or added into the batter. Toasted pecans and walnuts are fantastic options!
- Switch up the flavor: Swap out the cocoa and chocolate protein powder for 1 cup of vanilla protein powder, add in 2 tablespoons honey and 2 tablespoons blackstrap molasses [ in place of 4 tablespoon honey ] + add 1 teaspoon cinnamon. Instant blondie brownies!

Hey babes! You know me, always trying natural beauty treatments. It’s tremendous fun! And I’ve found that natural treatments work far better than any drugstore product. As silly as it may seem ( and look ) this coffee coconut milk face mask is a treasure. Most people drink coffee or enjoy it in some other form, including myself. I love mocha granola bars – I could get fat off of them [ In case you missed it, here’s the proof: No-Bake Mocha Granola Bars ]. Coffee can be used for more than a delicious snack or drink. There are many varying uses and this simple coffee face mask is my favorite!

What You Need

3 tsp coffee grounds

3 tsp chilled coconut milk [ dairy milk works too! ]

  1. Combine the coffee grounds and coconut milk and mix well – until loose paste forms. If it’s a little hard to work with just add a bit more milk.
  2. Gently massage the coffee/coconut milk paste onto face and let dry. This can be quite messy so make sure you apply over a sink. Leave mask on for 15-20 minutes ( or longer if you prefer ).
  3. Rinse off with cold water, massaging gently to exfoliate any dead skin from the face.

Your skin will be luminescent and baby soft! As an added bonus, the aroma from this mask is incredibly relaxing.

Note: You might feel a slight tingling on your face from the this mask, but it should not cause any irritation or discomfort whatsoever. I have never had a bad reaction from this mask. Everyone’s skin is different and reacts differently to varying natural ingredients. If you experience any discomfort, remove mask.
