One Pot Spicy Chicken Sweet Potato and Asparagus Hash

Hey babes! How happy are you that it’s officially spring!? I, for one, am most excited for sunny poolside days, driving with the top down, and easy one pot meals [ y’all know I love to eat! ]. A lot of one pot recipes are more suited for fall/winter, but this spicy chicken sweet potato and asparagus hash is perfect for these slightly warmer temps. It is light yet robust with flavor, and wonderfully filling.

It’s been a while since I really dug into creating a recipe. With all of the renovations taking place at the condo, Austin and I have been crazy busy – my kitchen time has been zero. It felt so good to get back in the kitchen and dream up a recipe. This hash is “like mind-blowingly delicious“.. or so I’m told ūüėČ

This hash is light and robust with flavor. Spicy chicken melds deliciously with the natural sweetness of the potatoes, and the snap of the asparagus adds a wonderfully fresh feel to each bite.

Lemon Parmesan Tuna and Black Bean Pasta

Lemon-Parmesan-Tuna-Black-Bean-Pasta-recipe

Hello hello! I promised this gluten free black bean pasta recipe last week, but, had a terrible time editing the images. I hadn’t planned on shooting this recipe originally, and I have not had time to reshoot it [ yet ]. I grabbed my camera and snapped some quick images in my kitchen.. at night. There wasn’t a single ray of natural light anywhere.

Mistakes. Mistakes everywhere!

Every single vertical image was unusable. Somewhere between panic and resolution, I thought: “This blog is about being real. So just be real about this.”¬†I messed up.. And I’m telling y’all about it. I have been practicing shooting in manual and I missed the mark on more than one image. Mistakes make us better right! So here are a tiny handful of horizontal images to stir your hunger!

Pasta dishes are right up there with pizza in my book. Pizza ultimately reigns supreme, but, every now and then a hearty plate of spaghetti really knocks those carb cravings out. Being a pasta lover with a gluten intolerance is.. intolerable [ Ha! I couldn’t help myself! ]. Bad humor aside, it really is tough to find gluten free pasta recipes that taste good and haven’t had all of the nutrients stripped from them.

One of the best alternatives to grain pastas is bean pasta. I started cooking with black bean pasta when even quinoa super grain pastas was making me sick. Tolerant and Explore Cuisine are the two best brands of bean and lentil pastas. They taste fresh and have a great texture! You can substitute either brand in any pasta dish without the fear of eating heavy, cardboard-esque spaghetti.

Lemon Pepper Parmesan Tuna and Black Bean Pasta
Prep Time: 5 min ¬†| ¬†Cook Time: 10 min ¬†| Serves: 2– PIN THIS RECIPE –

Lemon-Parmesan-Tuna-Black-Bean-Pasta-recipe

Ingredients:

1 box of black bean pasta [ I used Explore Cuisine brand for this recipe ]
1 can of tuna. Packed in water only
juice of half of a fresh lemon
2 tblsp of grated parmesan cheese
1 1/2 tsp black pepper
1 1/2 tsp salt
1/4 tsp garlic powder
1/2 tsp red pepper flakes
1 cup of frozen peas
olive oil

Instructions:

1. In a small pot, on low medium heat, mix together the tuna, frozen peas, lemon juice, cheese, and spices. Heat through till peas have completely thawed, and everything has blended together. About 5 minutes.

2. Cook black bean pasta according to directions, drain, and toss with a drizzle of olive oil.

3. Serve pasta and top with a heart spoonful of the lemon parmesan tuna and peas! Sprinkle with extra red pepper flakes and cheese to taste!

Though this recipe will serve two you might have trouble not eating the entire pot yourself. That is exactly what I did the last time that I made this dish! The flavor is hearty and has a kick to it. It’s so delicious! The very best part about this dish is that you do not have to feel even an ounce of guilt while eating it. This quick and easy dinner for two is nutrient rich and flavor packed! I hope you love it as much my honey and I do.

Have you tried bean pasta?

Happy eating and have a beautiful day!

Dark Raspberry Chocolate Ice Cream Bread

dark-raspberry-gluten-free-chocolate-quick-bread
dark-raspberry-gluten-free-chocolate-quick-bread
Raspberries and chocolate go together like peanut butter and jelly, eggs and bacon, thelma and louise.. [ not my best analogy ]. This quick bread has an ooey gooey decadent chocolate center, crispy coconut-sugar edges AND it’s gluten free – Sounds too good to be true, right? Trust me. It is not. Top this quick bread with frosty plump raspberries and your tastebuds won’t know what hit them!
This chocolate quick bread can be thrown together in a snap – just two ingredients needed. You won’t believe what the decadent base of this quick bread is made of!

As a gluten free foodie, I know the challenges of finding/making truly delicious GF baked goods. I have been baking for 8 years and I can count on one hand how many times a gluten free bake was even mildly successful. Gluten just makes things taste better – it makes things bake better too. My goodness, how it improves a bake.

Out of desperation for a bite of cake or bread that actually tasted good, I sat down in my kitchen [ a bar of dark chocolate at my side ] and crafted the ultimate GF quick bread. If you are unfamiliar with quick bread – also known as ice cream bread – let me enlighten you to the goodness. An ice cream quick bread combines self rising flour with ice cream, typically vanilla, to make an easy loaf that is mildly sweet, slightly bready, and quite moist. As I sat in my kitchen, wheels turning in my head, it hit me. Why not craft a loaf that is neither cake nor bread? Bump up the sweetness, add some chocolate, and fold in a gelato base and holy moly. That’s right, this bad boy has a gelato ice cream base that creates a luscious moist cake-like center, and bakes out with crispy/chewy bread-like edges. Gelato is incredibly rich, which makes it absolutely perfect for taking a typical quick bread and making it an artisanal quality treat.

To replace the self rising flour commonly used in this type of recipe, I measured out the best gluten free chocolate cake mix on the market [ Bob’s Red Mill ] and folded that into the gelato. Cake mix has the qualities needed to make this loaf rise, but, being a cake mix, it bakes out into a lighter texture. You could easily use cake flour and measure out the correct amount of baking powder, and cocoa – but why not just take a shorter short-cut!

Ingredients:

1¬ľ cup Bob’s Red Mill Chocolate Cake Mix
1 pint Dark Raspberry Talenti Gelato
1 cup frozen or fresh raspberries [ optional ]
1 tablespoon coconut sugar

Equipment:

Loaf Pan
Parchment Paper
Spatula
Mixing Bowl
Measuring spoon

Instructions:

Preheat oven to 375ňö. Line loaf pan with parchment paper.

Step 1. Place entire pint of Dark Raspberry Gelato in mixing bowl and stir with spatula until gelato has melted down to soft serve consistency. Add in 1¬ľ cup cake mix and stir until well combined.

Step 2. Pour quick bread batter into lined loaf pan. Sprinkle top generously with coconut sugar – especially around edges.

Step 3. Bake for 40 minutes or until center of loaf is no longer ‘wobbly’ – Edges will pull away from pan.

Serve with frozen raspberries or homemade vanilla bean whipped cream! Enjoy immensely. Share it with your family if you can ūüėČ

I have found that these types of breads/cakes fall some in the center toward the end of the bake. This doesn’t happen every time, but, they can concave slightly. The great thing about that is that you have a readymade well for the frozen raspberries, whipped cream, or even ice cream! If your loaf does stand tall simply carve out a shallow well to house the extra goodies. You can always serve the extras alongside rather than on top. A chocolate loaf topped with berries is a beautiful thing though!
This cake/bread was quite the hit among my non-gluten free family members. I implemented strategic measures in hiding this quick bread from my family РFor my own selfish gain of course!
This ice cream quick bread will store nicely in an airtight container for about a week. Store in the pantry or refrigerator if you’re feeling adventurous. This quick bread is outstanding chilled!

Recipe Additions/Substitutions:

// Any kind of berry would be delicious with this chocolate quick bread! Top with a combination of blackberries, blueberries and raspberries for even more flavor!
// If berries aren’t your thing, top with a homemade vanilla bean whipped cream, whipped coconut cream, or go for a good ole tub of CoolWhip.

Elevated S’mores Inspired Ice Cream Sundaes

This shop had been compensated by Collective Bias, Inc. and its advertiser. All opinions are mine alone. #SoHoppinGood #TopYourSummer #CollectiveBias

I had a lightbulb moment the other day while buying stacks on stacks on stacks of Blue Bunny¬ģ ice cream – Sweet and creamy S’mores Inspired Ice Cream Sundaes! Graham cracker crumbles, mini chocolate chips, pecans [ I took creative liberties ūüėČ ], marshmallowy Blue Bunny¬ģ Homemade Vanilla Ice Cream, crunchy fudge ribbons!! It’s all in there. Now all we need is a campfire and some toasted mallows!

I have been on a serious ice cream kick this month. I can’t get enough of it! Every sweet, cool bite is so refreshing, and so indulgent. These S’mores Inspired Ice Cream Sundaes are no exception! Every summer we get together with friends and spend our days camping out on the beach, cooking burgers, and roasting marshmallows over the campfire for s’mores. It is the perfect way to relax and enjoy time with family/friends! Especially after long hours spent studying ( I know my college girls are out there! ), or long days at work.

It is crazy hot here and our camping sight isn’t available yet so I decided to whip up a cool and creamy version of a classic s’more.. with a twist or two. I love my twists, what can I say. I hopped over to Walmart – Get it? Because Blue Bunny. HA! –  Anyway, I hopped over there and picked up some really delicious flavors. It’s such a small thing, but, I LOVE the new clear Blue Bunny¬ģ packaging! We eat with out eyes first, right? Seeing the swirls of fudge and peanut butter did me in. I would have purchased every carton in Walmart, but, self control. So I only got 3 cartons. Because really you can never have too much ice cream! Am I right?! I grabbed the Blue Bunny¬ģ Homemade Vanilla Ice Cream for the S’mores Sundaes, plus some other goodies for a fun twist on waffle cones! [ more about those below ], and whipped up these yummy, classy sundaes for everyone. You have to try these! They are easy and have s’mores inspired flavors with a sophisticated edge. These sundaes are great for entertaining, but, mostly they’re just great for your overall happiness ūüėČ

S’mores Ice Cream Sundaes
Prep Time: 15 min  |  Chill Time: 5 min  | Serves: 6-8

Ingredients:
– Blue Bunny¬ģ Homemade Vanilla Ice Cream
– Graham Crackers ( crushed )
– Pecans ( whole or chopped )
– Semi-sweet chocolate chips
– Smucker’s Magic Shell Chocolate Fudge Flavored Topping

Equipment:
– Ice cream scoop
– Chilled glass ice cream cups

Preparation.
This is literally the easiest recipe you will ever replicate. EVER. And most likely one of the more delicious ones. Before you start assembling these sundaes place the glasses in the fridge or freezer to get frosty. Crush graham crackers into bite size pieces and set aside. If you want to use chopped pecans, go ahead and chop those and set aside. Nibble on the goodies as you go along and then dive spoon-first into your S’mores Sundae making!

Step 1.
Place a small handful of the crushed graham crackers in the bottom of the chilled glass [ more if desired ]. Add in a small handful of whole or chopped pecans, and mini chocolate chips.

Step 2.
Add 2 generous scoops of Blue Bunny¬ģ Homemade Vanilla Ice Cream to the chilled glass, pressing ice cream down into the s’mores toppings.

Step 3.
Add another layer of crushed graham cracker, pecans, and mini chocolate chips. Top with 3 generous scoops of ice cream.

Step 4.
Top S’mores Sundaes with Smucker’s Magic Shell Chocolate Fudge Flavored Topping and a dusting of finely crushed graham cracker.

THAT’S IT! Place sundaes in freezer for later or enjoy immediately. I adore how simple these sundaes are. How crazy is the Smucker’s Magic Shell!? It’s the perfect topper to these sundaes. It hardens beautifully like those dipped cones we all know and love so much. It comes in a couple of flavors and is such an easy, simple, and inexpensive way to bring extra fun to your summer ice cream consumption ūüėČ

Sundae Substitutions/Additions:
– Blue Bunny¬ģ Butter Pecan Ice Cream is a delicious substitution for the vanilla ice cream. It adds a salty buttery bite that is delicious pairing with the grahams and chocolate!
Chocolate graham crackers are a phenomenal substitution! Pair with Blue Bunny¬ģ Cherry Pickin’ Chocolate‚ĄĘ Ice Cream for a unique treat!
Cinnamon grahams are another great substation. Pair them with the Blue Bunny¬ģ Toasted Almond Fudge Ice Cream for a spicy kick!

I’m not stopping there though! Remember at the beginning of this post when I said I also picked up some other goodies for a fun twist on waffle cones? Yeah, well, I got Blue Bunny¬ģ Peanut Butter Party and Blue Bunny¬ģ Butter Pecan + some Keebler waffle cones [ they have chocolate waffle cones fyi ] and popped those bad boys upside down in chilled mugs!
____________ Upside-down Waffle Cones ____________
Chilled Mugs  |  Stuffed Waffle Cones  | Enjoyment In Every Bite

Flavors/goodies:
– Blue Bunny¬ģ Peanut Butter Party
– Blue Bunny¬ģ Butter Pecan
– Keebler Waffle Cones [ regular or chocolate ]
– Smucker’s Magic Shell [ any flavor ]
– Toppings of your choice

Equipment:

– Chilled glass mugs

Instead of just licking on an ice cream cone, pop those ice cream stiffed cones upside down in chilled mugs! They make a fun presentation and keep the mess down on hot summer days! Top the upside waffle cones with Smucker’s Magic Shell Chocolate Fudge Flavored Topping or another flavor, and any goodies you desire! Since I had sundaes too I kept things simple and straightforward. Have fun with this!

Your sweet tooth is going to be extremely happy today. I made this no-churn White Chocolate Ice Cream and it was delicious.. I folded in some classic Keebler Fudge Stripes cookie pieces, that I got at Kroger, and it changed my tastebud’s life! If you haven’t joined the no-churn ice cream craze this recipe is where you need to start! Creamy, sweet white chocolate ice cream is getting cozy with fudge drizzled dark chocolate cookies. It’s almost sinful.

When I was a little girl I used to get so excited about those iced Keebler animal cookies. You know, the ones with little round sprinkles on one side? Oh my goodness. There are no words. Today, I get childlike excitement from the classic fudge stripes cookies from Keebler.  They look like a donut, taste like a cookie, and make you feel wistful. They’re more than a cookie, they are a nostalgic experience.

What’s old is totally cool again with this recipe! My family absolutely loved this ice cream. They devoured it ( I helped of course ) in a matter of minutes!

Ingredients:

For the ice cream.
– 1 cup heavy whipping cream
– 1 cup sweetened condensed milk
– 8 oz white chocolate
– ¬ľ teaspoon of vanilla bean ( vanilla extract can be substituted )

For the fold-ins.
– ¬ľ cup white chocolate chunks
– 16-20  Keebler Dark Chocolate Fudge Stripes Cookies ( chopped )

Equipment:
– hand mixer + whisk attachment
– chilled medium size bowl
– chilled loaf pan
– small mixing bowl
– small pot for double boiler
– spatula

Instructions.
Before you begin, place a medium size mixing bowl and a loaf pan in the refrigerator to chill. Roughly chop or hand break the 16-20 dark chocolate Fudge Stripes cookies and set aside. You can chop up some white chocolate pieces, and extra cookie pieces, to top this ice cream with if you like!

1. Pour whipping cream into the chilled mixing bowl, add in ¬ľ teaspoon of vanilla bean, and beat on high for 5 minutes, or just until soft peaks form. Cover and place in refrigerator.

2. In a double boiler, place the 8 ounces of white chocolate and 1 cup of sweetened condescend milk. Stirring continuously, melt chocolate and condensed milk together on low-medium heat. Mixture will be thick. Set aside in fridge to cool.

3. Once the white white chocolate ganache has cooled, gently fold the whipped cream into the  ganache until evenly combined. Fold in in chopped cookie pieces. Pour mixture into chilled loaf pan and place in freezer to set. About 1-2 hours.

| because of the fat content from the cream and condensed milk this ice cream will not freeze solid. It will be thick and creamy, and oh so delicious! |

4. Let the ice cream set and then ENJOY!

You can add in any Keebler cookie that you love to this recipe! Fudge Stripes are the hallmark of the brand for me, reminding me of friday night fellowships and late nights with friends. These cookies never go out of style! Sweet, crispy, chocolate-y nostalgia is wrapped up in every bite!

This ice cream is an elevated version of cookies ‘n’ cream ice cream. It really takes cookies ‘n’ cream to a new level! It is worth every single solitary calorie. This ice cream is very rich so enjoy it a little at a time! And then, you know, go for a run ūüėČ

Recipe Substitutions/Additions:

– Pecans add an amazing crunch to this ice cream and include a fun twist to classic cookies ‘n’ cream!
– If you are all about dark chocolate you can substitute the white chocolate for dark chocolate. It will still have that subtle cream taste, but, with a richer more bitter flavor.
– Play with the cookie choice! Keebler has so many yummy cookies to choose from; Chocolate chip, sandies, multiple fudge stripes flavors! Take you pick and have fun with this recipe!
